| Luka's 5th birthday is tomorrow! Since her birthday is so close to Kitty's, which was earlier this month, I decided to make one big cake for them, which they shared tonight. I had this great vision of a fancy two layerd cake. Didn't quite turn out how I wanted it to, but the girls enjoyed it. Downloading pictures now, but here is the recipe I used for the cake. I had to substitute the regular flour with buckwheat due to Luka's allergies.
CAKE
1 cup buckwheat flower
1 tsp baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots
1 tsp vanilla
1/3 cup honey
1 egg
Directions:
Preheat oven to 350°F (180°C)
Mix together flour and baking soda. Add remaining ingredients and mix well. Bake for 30-40min.
FROSTING
4 ounces of low fat cream cheese
3 tablespoons of canola oil
2 tablespoon of vanilla
1/2 cup of honey
