For as long as I've been posting I've never received post alerts unless I specifically hit the button for it... Now it seems like no matter what I'm getting notifications for any topic I reply in.

Is there any way to turn it off (so it doesn't do it automatically, I know how to turn them off individually?) My phone blows up with emails all day and it just drives me crazy.

I did something because that happened to me too. Not sure what happened but all of a sudden every post was hammering my phone with an email.

Profile>Preferences>Always Notify Of Replies - select "no". Then go back to Profile>Topics Being Watched - select all and then "Stop watching selected topics". That finally cleared the problem for me. Not sure why it changed all of a sudden like that. ¿?

Damn. I really suck at being an Admin lately.

Yes, the functionality default changed. I'm not sure why but it was nothing we did. It was a change implemented by the forum hosts. However, just as Eddy mentioned, that functionality is controllable.
